I have visited Tasmania. I don't know anything about pastry cooking, but I do rate it as one of the gastronomic wonders of Australia. It's Australia's cheese-making powerhouse, as well as producing most of its orchard fruits; the small-scale wine producers are great, as well. It specialises in luxurious boutique lodges and B&Bs, many of which are in wilderness areas and offer personal service and local cuisine.

All of this brings plenty of food enthusiasts to the island, so perhaps there's room for another pastry cook there somewhere!

In terms of what it's like... well, it's thick primeval forests, jagged mountains, highland snowfalls in winter, outdoor adventure all year round - a really clean, fresh and healthy environment.

The sparse population seems to be divided between eco-conscious and hippy types, and pig-hunting rednecks - somehow they all seem to rub along alright most of the time.

There are 200-year-old sandstone farmhouses and groovy weatherboard cabins, and less of the typical brick bungalows so popular on the mainland.

It's a beautiful state and completely different from mainland Australia. Land and property here are relatively cheap - there's plenty of space to be had with such a low population (about half a million people) so it's a great place to spread out, unwind and be at one with nature.
