want to convert 475 visa into 175

hi i reached in australia last month on mu 475 visa . as i this vis i have to wait for two years  fro pr and must live in regional areas. but as i did my study from india in mechanical engineering which in in the new list and i have 2 years experience as a production engineer and one year experience as a production manager previous i got my skill assessment from vetassess as a productiom manager . and i got this visa . now i am planning to apply for skill assessment as a production engineer to engineer australia and i have 6 in each bands in ielts so that i can apply for 175 visa as i am in australia with mu overseas experience . plz let me know that m i rite means can i do this i am very confused about this that what should i do this because i cant live in regional areas for two years because i havent got any job there.
